Apricot Glazed Pork Chops

When your boyfriend (or husband in some cases) demands meat and you are super lazy to cook anything and have no desire to change and go out to eat, this is what you should do. This is the by far the simplest pork chop recipes I have ever tried. It is super easy but looks like you put a lot of effort and taste equally good!

I did make few simple tweaks of my own to the recipe. Since I didn’t have apricot preserve, I used peach preserve instead and hence the name on the photo caption and I also added some red chilli flakes just to satisfy my South Asian taste.

On the side note: if you don’t have balsamic vinegar, I think you can use cooking wine as well. I don’t think it is a substitute but I think it wouldn’t make a lot of difference!

To complete the dinner, I prepared some mashed potatoes and quinoa to go with the pork chops!
