While we are hunkered down as the first snow storm hits Minnesota, I wanted to share an easy recipe for breakfast eggs. Instead of making traditional flat omelettes, why not make muffins made out of eggs. It is very simple to make but it definitely looks like you put in a lot of effort. Plus these egg muffins are delicious and fun to eat as well.
Here is what you will need to make 4 egg muffins:
- 3 Eggs
- 1/4 of an onion, chopped
- 3-4 slices of bacon cut into small pieces
- Salt and pepper
- You will also need silicon muffin pan or muffin baking cups.
First preheat oven to 350 degrees.
Heat a small pan. Cook the bacon pieces and chopped onions until they are golden brown.
Crack open the eggs and add cooked bacon and onion to the eggs. Add salt and pepper for taste and mix well.
Pour the mixture into silicon muffin pan or baking cups. Bake them for 15-20 minutes and watch the muffins rise.
While it takes a little more time to make a single egg muffin compared to an omelette, it saves a lot of time when you are making for a group of people.
